    Vanilla Caramel Sauce
    Step 1
    Preheat oven to 150°C/130°C fan-forced. Place a wire rack over a large baking tray and place in oven.
    Step 2
    Make Vanilla Caramel Sauce: Place brown sugar, butter, vanilla and cream in a medium saucepan over medium heat. Cook, stirring occasionally, for 5 minutes or until butter has melted and sugar has dissolved. Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until sauce is slightly thickened. Remove from heat.
    Step 3
    Preheat waffle maker following manufacturer’s directions.
    Step 4
    Place chocolate and butter in a large microwave-safe bowl. Microwave on MEDIUM (50%) for 2 minutes, stirring with a metal spoon halfway through, or until melted and smooth. Stand for 5 minutes to cool slightly.
    Step 5
    Whisk the eggs, milk and vanilla together in a large jug. Gradually add to chocolate mixture, stirring until smooth and combined. Sift flour and cocoa over mixture. Add caster sugar. Whisk until almost smooth and combined.
    Step 6
    Half-fill the waffle maker with batter. Close lid. Cook for 1 minute 30 seconds to 2 minutes or until cooked through. Transfer to wire rack in oven to keep warm. Repeat with remaining batter.
    Step 7
    Dollop the waffles with whipped cream and drizzle with a little vanilla caramel sauce. Serve with remaining vanilla caramel sauce and sprinkled with grated chocolate.
