For the ultimate comfort food you can't go past these crispy roast potatoes topped with a cheesy, bacon crumb and served with sour cream and chives.

    Step 1
    Preheat oven to 200C/180C fan-forced. Combine potatoes and 2 tablespoons oil in a large baking dish. Season with salt and pepper. Bake for 40 minutes or until just tender.
    Step 2
    Meanwhile, heat remaining oil in a medium frying pan over medium heat. Cook bacon for 4 to 5 minutes or until lightly golden. Drain on paper towel.
    Step 3
    Using a fork, squash potatoes until lightly crushed. Top with cheese and breadcrumbs. Bake for 15 minutes or until potatoes are crisp and cheese has melted. Top with sour cream, bacon and chives. Serve with kale leaves.
