Step 1
Heat the olive oil in a large pot over medium-high heat.
Step 2
Add the onion and garlic and sauté until translucent, about 2-3 minutes.
Step 3
Add the carrots and celery and sauté for another 2-3 minutes.
Step 4
Add the bell peppers and tomatoes and sauté for another 2-3 minutes.
Step 5
Stir in the thyme, oregano, salt, and pepper.
Step 6
Add the vegetable stock and bring to a boil.
Step 7
Reduce heat to low and let the soup simmer for 25-30 minutes, or until the vegetables are tender.
Step 8
Serve hot and enjoy!
