Step 1
Heat the olive oil in a large pot over medium-high heat
Step 2
Add the beef and cook for 5-7 minutes or until browned on all sides
Step 3
Remove the beef from the pot and set aside
Step 4
Add the onion, celery, carrots and garlic to the pot and cook for 5 minutes or until softened
Step 5
Add the bay leaves, oregano, basil and thyme to the pot and stir to combine
Step 6
Pour in the red wine and scrape up any browned bits from the bottom of the pot with a wooden spoon
Step 7
Add the crushed tomatoes and beef broth to the pot
Step 8
Return the beef to the pot and stir to combine
Step 9
Bring the mixture to a simmer, then reduce the heat to low and cover
Step 10
Cook for 1-2 hours or until the beef is tender and the sauce is thickened
Step 11
Season with salt and freshly ground pepper to taste
Step 12
Serve hot with your favourite pasta and a sprinkle of grated parmesan cheese, if desired
